A speciality of Vaud County, Switzerland, Maréchal aux herbes is made from cow’s milk delivered twice a day. The cheeses are pressed in wooden rings. They are wrapped in hemp or linen cloth. A mixture of aromatic herbs is scattered on the surface during curing, and maturing lasts around 120 days.
